You can use polish remover, but I don't advise it because the polish typically will lose its luster and natural high gloss when this is used. Yes, there are 'special' thinners available for this purpose, but if you read the ingredients on the bottle, it's almost identical to most polish removers. Like polish remover, it has one or more of the various solvents which are used in the manufacturing process of nail polish. Solvents are added to polish to help it dry. This occurs when the solvents are exposed to air and slowly evaporate. Similar, or even identical solvents are used to remove polish. That said, adding more of these solvents will generally not be helpful if you want to be sure your polish will shine after it is applied to your nails and dried.

In a pinch, a few drops can and usually will help to thin the polish out a bit, but use sparingly. Only a few drops are needed. If you need more than that, your polish is way too old to be saved and should be discarded. Just my opinion. How do you refill your dried nail varnish ?
I know some people use nail vanish remover, it's possible the salons have a better product they use.

I've also heard of paint thinner.
